Within the character manager:
Add different hues and shades of color for eyes, such as emerald instead of just plain green, onyx instead of just plain black...
Allow certain races to have hues that other races can't have. Such as crimson eyes for dark elves, amber for elves, cerulean for halflings, etc.
Turn "hair" into an object linked to the character via coding. So people can twist it into a topknot (and it would change the "hair" part of the character description when they do that until they change it another way), or pull it into a ponytail, or slick it back with oil, or braid it. Have the hair properties link also with the length the player picked in chargen, so a bald person couldn't do anything other than oil his scalp 
You see Joe the dwarf.
He appears to be in his 70's, has a well-oiled bald scalp, yada yada yada.
You see Sue the elf.
She appears to be in her 50's, has long curly raven-hued hair pulled up into a ponytail, blahblahblah.
Have height, age, and weight affect the person's description.
stats: You are a female elf. You are 110 years old. You are 5'9, and weigh 192 pounds.
Description:
You see Sue, a fairly young female elf. She is of common height and appears robust and full-figured.
(get rid of the whole "appears to be in her 110's" crap)
Get rid of level = age garbage. It makes absolutely no sense whatsoever for character A to suddenly appear 10 years older inside of a 2-week period while character B takes a month to age a single year.
Add to the character manager the ability to change height, weight, and beginning age, within reason. Allow players to start out portly and squat, or youthful or mature.
Let them change weight, at levels 20, 50, 75, and 100. Have characters who are particularly old lose an inch or two in height and change the description accordingly - that way, someone who is slender at 5'7" and 130 pounds, now becomes "average weight" at 5'5" and 130 pounds.
All of these things are considered "dynamic" coding and there already exists some variety of similar code within the game, so this is certainly "possible" from a coding perspective.
